  7. Cover the dish, and place in the fridge to marinate over night or at least 8 hrs.
  8. The next day, take the chicken out of the fridge a good 2 hours prior to cooking so it comes to room temperature.
  9. I dice loads of veggies on a baking tray and pre cook them for 30 mins in the oven.
  10. Then place the chicken with the skin side up on top of the veggies and make sure to get every last piece of that onion. Stuff some of the onion in the cuts.
    This onion will become the crispiest, most flavourful thing. It'll be your new favourite snack.
    You can drizzle some of the marinade juice on top of everything for extra flavour.
  11. Pre heat your oven to 220c. And place the tray in the middle.
    Cook the chicken for 45 mins until all the skin is deliciously brown and the onions are crispy.
  12. Take out the chicken when it's done and let it sit for 10 mins on the counter before serving.
